Weisser Spargel – Asparagus craving

On Friday I went grocery shopping and couldn’t pass the bunch of white asparagus I spotted. In the US we usually get the green asparagus, which tastes very good when grilled with olive oil, pepper and salt. But I grew up in a region where white asparagus are grown and I have fond memories of fresh asparagus cooking sessions with friends.

The dish is very simple: White asparagus (peeled and boiled in salt water), boiled potatoes, sauce hollandaise and prosciutto. The dish is a feast for the taste buds! So yummy after many years of withdrawal. Can’t wait to have it again….
