- 1 cup pineapple juice
- 1 cup soy sauce – salt stand-in
- 4 tbsp vegetable oil
- 1 cup light brown sugar – packed
- 0.5 cup rice vine vinegar, or apple cider
- 2 tablespoon fresh lime juice
- 2 tablespoon finely minced garlic
- 4 teaspoons finely minced ginger
- 1/2 tsp chili or sriracha sauce to taste – optional spiciness
- salt to taste
- 1/2 tsp black pepper
- 8 large chicken thighs (boneless, skinless)
Mix and marinate for 4+ hours, 1hr absolute minimum, overnight OK
Let the marinated meat rest at room temp. for 30min before cooking, 5-7min each side on grill.
